NUTRITIONAL POTENTIAL AND ANTINUTRIENTS OF COMMON PUMPKIN LEAVES AND FLOWERS (YELLOW VARIETY)

ABSTRACT
This study investigated the nutritional and anti-nutritional compositions of the leaves and
flowers of the common pumpkin (Cucurbita moschata), focusing on their potential
contribution to food security and human health. The samples were collected, processed, and
analyzed using standard procedures as described by the Association of Official Analytical
Chemists (AOAC, 2019). The proximate composition revealed that the leaf contained higher
crude protein (2.18%), ash (12.23%), and carbohydrate (51.92%), while the flower recorded
higher moisture content (47.43%). Vitamin analysis showed that the leaf had higher vitamin C
(24.67 mg/100g) compared to the flower (18.40 mg/100g), suggesting greater antioxidant
potential. Mineral analysis indicated that potassium and sodium were present in beneficial
concentrations within WHO acceptable limits, essential for maintaining electrolyte balance
and normal body function.Phytochemical screening showed the presence of flavonoids,
glycosides, tannins, and saponins, which possess antioxidant, antimicrobial, and therapeutic
properties. These findings reveal that Cucurbita moschata leaves and flowers are rich sources
of nutrients and bioactive compounds that can help reduce malnutrition and improve health,
especially in rural and low-income communities. Proper preparation and processing are
recommended to minimize anti-nutritional factors and enhance nutrients availability.
