Abstract
This research examine the Bacteriological Assessment of street vended food” (suya meat, suya fish and chicken). Sample were purchased from suya meat, suya fish and chicken vendors in Maiduguri at different locations. Colonies were observed and the bacterial count for sample were 1.5*10-2, 2.2*10-2,2.2*10-3,1.4*101,1.1*102,1.8*102,2.3*101,1.0*102,1.9*101, some are too numerous to count, each colony has gram stained and examined microscopically. Bacteria isolated were staphylococcus aurecus, salmonella and E. coli, most of these micro-organisms identified are pathogenic and are toxic. They are capable of causing illness. For instance staphylococcus aureus produced air exotizcin and can withstand temperature of 10000c for 30 minutes when ingested it causes diarrhea, vomiting and gastro enteritis lasting 6 – 8 hour. The findings highlight the potential health risks associated with consuming street-vended foods in Maiduguri, emphasizing the need for improved hygiene practices among vendors and greater public awareness regarding food safety.
