PRODUCTION OF DIETARY SUPPLEMENT AND PROXIMATE DETERMINATION OF FORMULATED SESAME, SORGHUM AND GROUNDNUT
Abstract
This study aimed to produce a dietary supplement using formulated sesame, sorghum, and groundnut and determine its proximate composition. The formulated supplement was produced using a combination of sesame 20%, sorghum 60%, and groundnut 60%. The proximate analysis revealed that the supplement contained 22.0% protein, 35.5% fat, 5.7% ash, and 25.3% carbohydrate and moisture 6.3%. The formulated supplement can serve as a nutritious and healthy food option, particularly for individuals with malnutrition or those requiring dietary supplements. The study's findings are consistent with previous research on the nutritional benefits of sesame, sorghum, and groundnut (Adebayo-Oyetoro et al., 2022; Oyedeji et al., 2020; Afolabi et al., 2019).
