Abstract

Hyphaene thebaica, commonly known as the doum palm, is a valuable fruit tree in many tropical regions. Despite its nutritional potential, the antinutritional and mineral constituents of H. thebaica fruit remain poorly understood. This study aimed to investigate the antinutritional factors and mineral composition of H. thebaica fruit. The results showed that the fruit contains significant amounts of antinutritional factors, including:Cyanide(96.68 ± 1.24),Oxalate( 2.1614 ± 0),Phytate(46.05 ± 0.83), Tannins(0.016 ± 0.01). The mineral composition analysis revealed that the fruit is rich in:Potassium(102.1 ± 2.13),Sodium (64.4 ± 0.77), Calcium( 31 ± 1.63),Manganese(1.46 ± 1.06). The findings of this study provide valuable insights into the nutritional and antinutritional profiles of H. thebaica fruit, highlighting its potential as a nutritious food source while also identifying areas for further research and potential nutritional improvements.
