DETERMINATION OF THE GLYCEMIC INDEX AND THE GLYCEMIC LOAD OF COMMERCIAL DIABETIC BREAD SOLD WITHIN KANO METRAPOLIS

ABSTRACT Low glycemic index (GI) and glycemic load GL diets have more recently been widely recommended for the prevention and treatment of chronic diseases including diabetes, obesity, cancer and of cardiovascular diseases, especially dyslipidaemia. This study was aimed at evaluating nutritional value and GI/GL of commercial diabetic bread sold within kano metropolis. The GI values were determined using standard method (glucose oxidase method). A total of ten consent subjects aged between 18 to 30 years were used for the study. The weight and the height were taken to determine their BMI. After 8 to 12 hours overnight fasting. Their blood samples were collected and glucose levels was measured at 0 (fasting level), 30mins, 60mins, 90mins and 120mins (OGTT) each. The result shows that The Glycemic index (GI) of Sample A (What son's Bakery) is 56.23 ± 2.78a and it's Glycemic load (GL) is 20.40 ± 3.97b as well as the average body mass index (BMI) of the subjects 20.40 ± 3.97b and average age of 21.20 ± 1.92c. The Glycemic index (GI) of sample B (Oasis Bakery) is 54.87 ± 3.08a and it's Glycemic load (GL) is 27.54 ± 1.44b as well as the average body mass index (BMI) of the subjects 19.00 ± 2.34b and average age of 22.00 ± 2.92c .The graph of blood glucose was plotted against time, Due to the low glycemic indices of the diabetic breads, a diabetic patient can consume it with a decreased risk of elevating sugar level.
