Abstract

The study provides a comprehensive analysis of the nutritional, mineral, antioxidant, and anti-nutritional properties of Bauhinia refescens, focusing on its leaves, stem, and roots. The findings highlight the plant's potential as a valuable source of nutrients and bioactive compounds. Proximate Composition: The leaves, stem, and roots exhibited significant levels of carbohydrates, proteins, and fiber, indicating their potential use as a dietary supplement or food ingredient. The low-fat content makes it suitable for low-fat dietary formulations. Mineral Content: The plant parts were found to be rich in essential minerals such as calcium, magnesium, iron, and zinc, which are vital for bone health, enzymatic functions, and overall well-being. Antioxidant Properties: High antioxidant activity was observed, particularly in the leaves, suggesting their potential in mitigating oxidative stress and preventing chronic diseases such as cancer, diabetes, and cardiovascular disorders. Anti-Nutritional Factors: Although anti-nutritional compounds like tannins, oxalates, and phytates were present, their levels were within acceptable limits, making the plant safe for consumption. Detoxification methods such as boiling or fermentation may further reduce these compounds.
