Abstract

Abstract The proximate composition and minerals content of fermented soybeans (Soyiru) were investigated using the standard method described by Association of Analytical Chemist (AOAC 2023). The outcome of the proximate composition of fermented soyabean (Soyiru) are delineated in table 1 .Result depicts that soyiru contains crude protein ( 40.12%), crude fiber (3.63%), Fat(4.51%), Ash (2.63%), moisture (10.45%) and carbohydrates (38.66%). Table 2 shows the result of mineral analysis of fermented soyabean (Soyiru). The result depicts that soyiru contains Na (0.43mg) K(0.63mg), Ca(0.31mg),P (7.83mg),Mg(1.81mg),Fe(1.695mg),Zn(1.715mg),Cu(0.08mg),Mn(0. , 045mg),S(0.105mg),CoMg(0.0055mg),Mo(0.01mg) and Se(0.080mg). The results have shown that Soyiru is a good source of phosphorus (7.83mg). Therefore, fermented soyiru is a nutritionally endowed source of protein and phosphorus .
