PHYTOCHEMICAL SCREENING AND VITAMINS DETERMINATION IN RED BELL PAPPER (CAPSIUM ANNUUM) UNDER DIFFERENT PRESERVATION TECHNIQUE
Abstract
Bell pepper is a good source of antioxidant being rich in ascorbic acid, Vitamin A, E,
Lycopene, Beta-Carotene and Other Phytochemicals. This work was designed to find the
effect of fresh, drying and freezing method on pepper. Phytochemicals screening and
Vitamins compositions were analyzed Using standard procedure. Data generated were
analyzed using statistical Package from social science version 20. The result showed that
Vitamin A content of pepper ranged between 0.329-0.6213 µmol/L with dried pepper
having the highest Value (0.329 µmol/L) and frozen pepper having the lowest Vitamin A
Value (0.6213µmol/L). The Vitamin C content Of the dried pepper (68.000mg/Dl) was
significantly Lower (P
