STUDIES OF EFFECTIVENESS OF DIFFERENT METHOD FOR PRESERVING EXPOSED CANNED AND SACHET TOMATOES
Abstract
ABSTRACT
Effectiveness of different methods of preserving exposed canned and sachet tomatoes, was investigated using standard methods. The geographical positioning system (GPS) of the samples collection site was accurately taken. The results of bacterial means of exposed tomatoes recorded the highest bacterial means count for samples opened and kept at room temperature. The samples preserved under oil and refrigeration recorded the least means bacterial after 24 hours of preservation with $5.3 \times 10^6$ cfu/g. Bacillus subtilis, Streptococcus spp., Pseudomonas aeruginosa, Micrococcus spp., and Proteus mirabilis were presumptively confirmed. Findings from proximate analysis revealed that rio-giko recorded the highest values for moisture, fibre and fat contents with values of 0.71, 1.06 and 20.6 respectively, while the highest value of ash was recorded by gino with value 0.58. Finally, results of antibiotic sensitivity test confirmed ofloxacin the most potent antibiotic among the selected antibiotics. The findings of this study therefore suggest that exposed canned and sachet tomatoes are best preserved by concurrent keeping under oil and refrigeration
