Abstract

ABSTRACT Vegetables are very important protective foods that are useful for health maintenance of the body and also in fighting and prevention of various diseases. This project investigate the proximate analysis on spinach and moringa obtained from kwakwaci garden. Fresh samples of the vegetables were obtained using random selective method, and were taken to department of plant biology, herbarium unit for identification and a voucher numbers will be deposited UAM/FH/0256. The results of the proximate composition shows that spinach was the lowest in nutrition but contain relatively higher composition of carbohydrate and protein. while Moringa were the best source of moisture, ash content, crude fat and fiber. Almost all these vegetables exhibit great contributions towards dietary requirements, but Moringa surpassed spinach regarding nutrition. Due to this reason, the consumption and cultivation of Moringa must be promoted. The study recommends that Moringa should be promoted for its higher mineral content and moderate levels of protein and fat, making it ideal for improving the nutritional status of individuals with micro nutrient deficiencies. Spinach is also recommended for diets requiring high protein and energy content, especially for energy-demanding populations such as children and active adults
