Abstract

This project work presents the proximate, Phytochemical and mineral characterization of seeds of Sesame indica. The seeds were procured from Lagos, and it was brought into the laboratory for further analysis, following standard procedure by AOAC method. Results from the proximate analysis showed moisture (8.0%) ash (2.01%), crude fibre (1.89%), crude protein (23.00%) Fat (28.01%) and carbohydrate (37.09%). Mineral analysis result showed sodium (544.35mg/100g). potassium (220.00mg/100%), calcium (892.30mg/100g), magnesium (546.6mg/100g), zinc (3.40mg/100g), Phoshorus (422.12mg/100g) and iron (68.50mg/100g). the distribution showed that Magnesium and Calcium had the highest percentage while the lowest was Cobalt (1.05mg/100g). This study also revealed that Sesame seed also has come Phytochemical contents in it like Alkadoid, Saponin, Tannin, Carbohydrate which are also positive using different extract like water, ethanol and N-Hexane extract. This study showed that the sesame seed is a good source of food and could be useful as food supplement and industry. Generally, the results obtained in this present study suggest that S. indium seed investigated can be good source of protein, carbohydrate, minerals and crude fibre. Therefore could be exploited as commercial source to supplement both animal and human consumption consider the anti-nutrient factors.
