Abstract

Determination of antinutrients and elemental compositions of both fresh and dry tiger nuts have been drawn following standards procedures and spectrophotometry from institute of Agricultural Research, ABU, Zaria. Based on the results obtained, the percentage ofphytates, oxalates, saponins, flavonoids and tannins in both fresh and dry tiger nuts were:23.7, 23.2, 34.0, 24.1 and 26.0%; while that of dry tiger nuts were: 29.5, 24.8, 25.2, 18.3 and 26.0% respectively. Also the results of elemental compositions for mean concentrations of calcium, magnesium, iron and potassium were: 0.34, 2.77, 11.52 and 40.00ppm for fresh tiger nuts; while the dry tiger nuts were: 0.16, 2.68, 8.97 and 38.00ppm respectively. These values were found to be within the safety limits of 1000-1300ppm, 360-420ppm, 1-20ppm and 2300-4300ppm by the United States WHO/FDA(2023) respectively. It is therefore recommended that more research should be encouraged on scavenging activities, proximate compositions and bioactive and antimicrobial activities of the fresh and dry tiger nuts.
