ISOLATION AND IDENTIFICATION OF FUNGI FROM A SLATED BREAD (GURASA) SOLD AT UMARU MUSA YAR'ADUA UNIVERSITY KATSINA
Abstract
This research project investigates the fungal contamination of Gurasa, a locally baked bread commonly sold at Umaru Musa Yar'adua University (UMYUK), Katsina. Samples were collected and analyzed to isolate and identify fungal species using standard microbiological techniques. The study identified five genera: Aspergillus niger, Aspergillus flavus, Penicillium sp., Rhizopus stolonifer, and Mucor sp. The presence of these fungi points to poor hygiene and handling practices. This study underscores the need for improved food safety awareness and regulatory enforcement
