BACTERIOLOGICAL QUALITY ASSESSMENT OF RAW COW MEAT SOLD AT WUDIL MARKET, KANO STATE
Abstract
Abstract
This study evaluated the bacteriological quality of raw cow meat sold in Wudil Market, KanoState. Background studies indicate that meat, being nutrient-rich, is highly perishable andcanharbor pathogens if handled under poor hygienic conditions. The aim was to determine microbial
loads and identify key bacteria in raw beef samples from five slaughter points in Wudil. Meat
samples (250 g each) were aseptically collected and analyzed for total viable bacterial count, coliform count, and specific pathogens (E. coli, Salmonella, Staphylococcus aureus) usingstandard culture techniques. Results (Table 1) showed mean aerobic plate counts exceeding106CFU/g in most samples, well above acceptable limits. Coliform counts ranged up to3×102CFU/g, and bacterial pathogens including S. aureus, E. coli, and Salmonella were isolated. Thesefindings demonstrate that raw beef from Wudil Market is highly contaminated. The conclusionhighlights the need for improved meat handling practices and routine microbial surveillance. Recommendations include enforcing better hygiene among butchers and providing consumereducation to reduce foodborne disease risks
