Abstract

ABSTRACT This project examined the nutritional composition and elemental composition of dried fish sold in Aleshinloye Market, Oyo State to evaluate its safety for human consumption. Five dried fish species were collected from Aleshinloye Market, Oyo State and analyzed for proximate composition, including protein, lipid, ash, and carbohydrate content, as well as elemental composition such as calcium, potassium, sodium, zinc, iron, copper and magnesium were also assessed using standard analytical methods. Results showed significant variations in the nutritional composition of the fish species, with high protein and mineral content, making them valuable dietary sources. The study underscores the need for continuous monitoring, improved fish processing practices, and stricter regulatory enforcement to ensure the safety of dried fish in local markets.
