ANTINUTRITIONAL FACTORS AND ELEMENTAL COMPOSITION OF CASSIA OCCIDENTALIS LEAVES
Abstract
Cassia occidentalis L. commonly known as coffee senna is distributed as weed throughout the tropical and subtropical regions of the world. This study was designed to evaluate the Antinutritional factors and mineral composition of leaf of Senna occidentalis a common vegetable in the northern Nigeria. The Antinutritional factors showed that C. occidentalis has an oxalate content of 20.44 ± 0.98021mg/100g, phytate contents of 16.5 ± 0.13077mg/100g, tannin content of 10.300 ± 0.8185mg/100g, saponin content of 9.296 ± 0.14855mg/100g and flavonoid of 12.518 0.04536mg/100g. The result of the mineral analysis revealed that leaf of C. occidentalis contained phosphorus of 2.860 0.01539 as the highest mineral. Other minerals detected were Iron, content of 1.193 0.00896mg/100g, calcium content of 0.553 ± 0.01973mg/100g, copper content of 0.350 ± 0.01058mg/100g and zinc content of 0.390 ± 0.00954mg/100g. The presence of these minerals may be responsible for the nutritional properties of the plant.
