NUTRITIONAL AND ANTI-NUTRITIONAL ANALYSIS OF OBA SUPER YELLOW MAIZE (YELLOW ZEA MAYS)
Abstract
ABSTRACT
This study investigated the nutritional, mineral, and anti-nutritional composition of yellow maize (Oba Super Yellow Maize). Proximate analysis revealed a high carbohydrate content (70.61%), moisture (10.83%), lipid (5.00%), and fiber (3.33%), with moderate protein (8.9%) and low ash content (1.33%). The high carbohydrate content indicates its potential as a source of dietary energy. Mineral analysis showed concentrations (mg/100g) of calcium (0.0234), iron (0.0021), potassium (0.0152), magnesium (0.0065), sodium (0.0145), and zinc (0.0001). Anti-nutritional compounds showed concentrations (mg/100g) of oxalates (103), phytates (43), and tannins (1764). While phytates and oxalates were present at levels considered safe, tannins were above the daily safe limit, indicating potential anti-nutritional effects. These findings suggest that yellow maize is a good source of energy but has limitations as a complete nutritional source due to its mineral and protein content. Further research is recommended to optimize processing and explore its potential in human diets and animal feed.
