Abstract

ABSTRACT In this study, Comparative Qualitative and Quantitative Evaluation of Phytochemicals in Fresh and Dried Zingiber officinale (Ginger) was carried out to determine the differences in bioactive compounds between the two processing states. The qualitative screening revealed the presence of alkaloids, flavonoids, saponins, and tannins in both fresh and dried samples, indicating that these compounds are inherent constituents of ginger irrespective of processing. However, The quantitative analysis showed that fresh ginger contained higher levels of alkaloids (6.31 ± 0.15 mg/100 g) and saponins (1.82 ± 0.10 mg/100 g), while dried ginger recorded higher concentrations of flavonoids (4.67 ± 0.08 mg/100 g); however, tannin content remained relatively similar between the two samples (1.75 ± 0.05 mg/100 g in fresh and 1.70 ± 0.06 mg/100 g in dried ginger). These findings indicate that drying influences the relative abundance of phytochemicals in ginger.
