NUTRITIONAL ANALYSIS OF LOCALLY PREPARED TIGER NUT MILK (KUNUN AYA) CONSUMED BY YOBE STATE UNIVERSITY STUDENTS
Abstract
The study was conducted to analyze the nutrient content of tiger nut milk in Yobe States University. Tiger nut milk popularly known as (Kunun Aya) is a locally non alcoholic beverage drink that is widely consumed for it thirst quenching and high nutritive properties. Samples of locally prepared tiger nut milk (kunun aya) were collected from three different vendors in Yobe State University Cafeteria. The sample were separately subjected to analyze the nutrient content. The result was determined using standard procedure by Association of analytical chemistry (AOAC, 2003). The results revealed that sample A has nutrient content of 91.01% moisture 0.91%fibre 0.50%ash 1.02% fat 0.88% protein 5.67% NFE. Sample B had nutrient content 93.01% moisture 0.47% ash 0.84% fat 0.72% protein 0.83% fibre 4.04% NFE. Sample C had nutrient content of 93.55% moisture, 0.40% ash, 0.61% fat, 0.84% protein, 0.60% fibre and 4.00% NFE. Based on the result obtained in this study, it’s concluded that tiger nut milk has high percentage moisture content and high percentage carbohydrate. Thereby has high energy and thus, can be used as a good source of energy supplement for the body. It’s recommended that further research on other mineral contains should be conducted to have the complete image of actual nutritive value of tiger nut milk consumed in the University Campus.
