Abstract

ABSTRACT This study investigate the nutritional composition of ukpo [mucuna flagellipes] and achi [branchystegia eurycoma], two underutilized legumes in Nigeria. Proximate analysis was conducted to determine the moisture, ash, crude protein, crude fat, crude fibre, and carbohydrate content of both seeds. The result of the proximate composition for ukpo was shown to be moisture[10.2%], crude protein [22.1%], fiber [5.5%], fat [2.1%], ash [3.8%), carbohydrate [55.3]. While the result of the proximate composition for achi was shown to be moisture [8.23%], crude protein [15%], fat [3.5%], fiber [2.2%), ash [6.1%), and carbohydrate [1.1%]. this study reveals that both seeds are rich in protein, fiber and carbohydrate, making them valuable for human consumption and individual applications.
