Abstract

ABSTRACT Groundnut oil, also known as peanut oil or just vegetable oil is widely used in all homes in Nigeria in cooking and in other kitchen processes. The Northern part of Nigeria is also notable for the production of groundnut seed (Arachis hypogea L.) which is one of the major sources of groundnut oil in Nigeria. The physicochemical properties of commercial groundnut oils sold in Kano metropolis, Kano State, Northwest Nigeria were investigated in this study. Five different groundnut oil products purchased from Kurmi market were analysed. The oil from sample D has the highest saponification value of 217.06±1.45mg KOH/g which is significantly high compared to that of sample E (175.78±0.93). Iodine value was significantly higher at (p 0.05) in oil from sample E (92.85±0.17g/100 g) compared to oils from Sample (42.83±0.21) and sample D (46.16±0.35). Groundnut oil from Sample A has the highest acid value 6.56±0.17 which was above the cut-off value of 5.99, while the oil in sample E has the lowest acid value of 1.76±0.23. The oil from sample C has the highest Peroxide value of 5.56±0.3 while oil from sample A recorded the lowest peroxide value of 2.15±0.6. Viscosity ranged from 0.0178, 0.0177, 0.0175, 0.0173, and 0.0171 for sample E, C, A, B and D respectively. Values for anti-nutritional were determined. Alkaloids gave, 0.404, 0.631, 0.557, 0.657, 0.608 for and Tannins gave, 0.755, 0.623, 0.726, 0.745, and 0.608 for sample A, B, C, D, and E respectively. Concentrations of leads determined were 0.156, 0.129, 0.180, 0.121, and 0.103 for sample A, B, C, D, and E respectively. The result shows that the sample A & E which are gotten from Valencia peanuts are of good nutritional value and for industrial applications. All these concentrations were within the limits of the accepted values by regulatory bodies. Keywords: Groundnut oil, Kurmi, Kano, Physicochemical properties
