Abstract

This study assessed the chromosomal aberrations induced by edible colors using Allium cepa meristematic root cells. The effects of different concentrations of Fast Green dye on cytological parameters were investigated, and the frequency of chromosomal aberrations was determined. The results showed significant increases in chromosomal abnormalities, including breaks, exchanges, and deletions, with increasing concentrations of the dye. The mitotic index decreased, while the mitotic depression increased, indicating genetic damage. The study highlights the potential genotoxicity of Fast Green dye and underscores the need for careful evaluation of food additives to ensure human safety.
