MICROBIOLOGY STUDY AND SAFETY ASSESSMENT OF FERMENTED PARKIA BIGLOBOSA USING MICROWAVE AND SOLAR DRIED METHOD OF PRESERVATION
Abstract
Abstract:Fermented locust bean (FLB) is a nutritious food ingredient commonly consumedin many parts of the world. However, its high moisture content and microbial load can limit its shelf life and safety. This study evaluated the microbiological safety of FLB preserved by microwave and solar drying methods. Samples of FLB were divided into three group:fresh(control), microwave-dried, and solar-dried. Microbiological analysis was conducted on all samples to determine the presence of pathogens, including Escherichia coli, Salmonella spp, Pseudomonas spp, Micrococcus spp and Staphylococcus aureus. The results showed that both microwave and solar drying methods significantly reduced the microbial load of FLB, with solar drying being more effective. However, microwave drying resulted in a higher retention of nutrients and antioxidants. The study concluded that both microwave and solar drying methods are effective in preserving FLB, but solar drying is a safer option due to its lower risk of recontamination. The study recommends the use of solar drying as a preservation method for FLB to ensure its safety and nutritional quality.
