Abstract

ABSTRACT The aim of this study was to carried out the proximate analysis of two underutilized leafy vegetables in Akwa Ibom State. Standard analytical methods recommended by A.O.AC were used to carried out the analysis. The result of this study revealed that Manihot esculenta and Rosa sinesis leaves contains appreciable amount of nutrients analysed. However, Manihot esculenta leaves contained significantly higher amount of moisture, fibre, carbohydrate and caloric value while Rosa sinesis leaves had significant higher amount of ash and protein, but the fat content in both samples had no significant difference. The study further showed that of all the nutrient composition analyzed in this study, only ash content was up to the RDA, which implies that they may contain good amount of minerals. It may be recommended that further studies should be carried out on the anti-nutritional composition of these leafy vegetables so as to ascertain the safety of the underutilized leafy vegetables for human consumption if properly processed.
