Abstract

In this study, assessment of nutritive profile of two commercial smoked fish products (Bonga fish and Croaker fish) sold in Ikot Ekpene was carryout. The results of the composition of two commercial fish revealed that Bonga fish recorded the higher value of moisture (2.31 ± 0.002%), Ash (14.30 ± 0.001%), Fibre (13.11 ± 0.005%) and Fat (11.30 ± 0.011%) when compared to the other fish species (Croaker fish) which had higher value of Protein (58.38 ± 0.020%), Carbohydrate (9.75 ± 0.005%) and Caloric value (354.87 ± 0.012%). However, the relative closeness in the values of the proximate parameters when compared among the sample both fish species were rich in proximate composition and could contribute substantial amount of protein, lipid, carbohydrate and fibre in human nutrition. From this study, it was concluded that the Bonga fish had higher values in most proximate parameters compared to Croaker fish. Therefore proximate composition of fish varies in different fish species.
